Just looked it up; so it appears that it has to do with how ice molecules crystallise, air temptation, and the rate of cooling: the spikes form at 60 degree angles and it optimally requires about -7 degrees Celsius. If not it can freeze in more of a “sheet like” pattern which rapidly covers the surface.

What's up with these prices? It would be one thing if they were serving high end meals like real truffles, A5 wagyu, filet mignon, caviar, fresh caught fish, etc but what they're serving is something you can usually find at any half decent 3- 3/1/2 star restaurant for half the price and probably just as good if not better.

Edit: $12 bucks for a fucking pretzel?!
