Just looked it up; so it appears that it has to do with how ice molecules crystallise, air temptation, and the rate of cooling: the spikes form at 60 degree angles and it optimally requires about -7 degrees Celsius. If not it can freeze in more of a “sheet like” pattern which rapidly covers the surface.

It cost $15 bucks for a basic bitch beet salad, $13 bucks for some lousy tomato soup and sourdough bread, $10 bucks for a side of mashed potatoes, and $13 bucks for your average Caesar salad?!
What's up with these prices? It would be one thing if they were serving high end meals like real truffles, A5 wagyu, filet mignon, caviar, fresh caught fish, etc but what they're serving is something you can usually find at any half decent 3- 3/1/2 star restaurant for half the price and probably just as good if not better.
Edit: $12 bucks for a fucking pretzel?!

The ice cube freezes from the outside in, and water also expands as it freezes, so it has nowhere to go but up.

When they first came out with those strips all you had to do was gently tear the bill next to the strip n pull and out it came. Now it seems a bit harder judging by your work.

Doc told me about a doctor at the hospital during his residency who tried to do it himself with his nurse wife assisting. He passed out and had to be ambulanced to the ER he was the head of. They never let him live it down
