...mostly correct? I'm Canadian so not an expert, but Worcestershire sauce is very different from both HP and A1.

Recipe - I was winging it so best guess on amounts:
- 3lb Pork Loin Chops (these were boneless and on sale for $1.88lb)
- Salt/Pepper/Garlic type seasoning (I used The Spice House - Pullman Pork, personal fav)
- 1 Tbsp oil
- 1 cup chicken stock
- 6 cloves crushed garlic
- 1 Tsp dried thyme
- 2 Tbsp Dijon mustard
- 2/3 cup heavy cream
This is a one pan meal. Heat oil in cast iron or similar.
Add seasoned pork chops in two batches and cook till almost done and remove to a separate plate.
Once 2nd batch is done add butter (should not be much oil left in pan) and then sauté garlic 30 sec or so
Add chicken stock to deglaze pan. Toss thyme in. Add Dijon and whish to incorporate.
Simmer a few minutes then add cream. Simmer a few more till reduced the way ya want.
Add chops and any accumulated juices back in.
Salt/Pepper to taste along the way.
