Looks beautiful, but that's barely 2 bites If you're trying to be dainty about it.
I understand that some (very affluent) people are willing to pay hundreds of dollars to be served a long succession of micro-servings of overly expensive and overly aggrandized plates according to the whimzies of some hoity-toity artisan chef, but most of us just want to eat good food and be fulfilled. If the shit was any good, I'd be pissed I only got 1. It just kinda reeks of elitism and caters to a tiny minority of uppity mfkrs, and that's not what sharing of good food means to me nor any chefs I follow and respect.

There is a misconception that crust can only be achieved from a ridiculously hot pan. If the surface is dry, and a little weight is added, you can still get crust from a reasonably hot pan that isn't smoking.

Yeah the sage on the plate was raw, more for decorative purposes because the fried sage was really shriveled up

Yeah, I ate it for lunch today and it is fine. The parsley wilted a little bit but other than that it was totally fine. Iβd say itβs for a 48-60 hour life span before the cheese really starts to break down

On a vague memory of what a Philly Cheesesteak is, I decided to make this sandwich based on it. I used 20% fat Beef Mince, melted some mature cheddar on it, arranged it along the bagguette with brown sauce and english mustard added liberally on top. As I felt that the Cheddar wasn't visible enough I also lightly grated some on top. Is it authentic? hell no. Did it taste good? Yep.
