Well drying it out first is a good step. Botulism needs a certain moisture content. Sun dried vegetables also benefit from UV sterilization. And the sun is really good at that. Either way I believe if done the proper way it's fine, but you need to make absolutely sure that the water content in the zucchini is below the range since you don't have any acid.

Making one is arranging one - that's how you make a Charcuterie board, or smörgåsbord, or similar dishes with multiple basic ingredients or dishes. I bet OP even sliced the fruits and vegetables himself, which constitutes preparing a meal.

So many incorrect methods in the comments.

It's egg yokes, mixed with the rendered fat from cooking the Guanciale. Add the cheese (Pecorino traditionally, but I like a bit of Grana Padano mixed in) then add a little bit of pasta water to get the right consistency. Add generous black pepper to taste.

Use a double boiler for mixing if your arms need a workout, or a blender if lazy.

Edit: None of you snobs know how to cook....lol. Guess what...you can use a blender to make the sauce for Cacio e Pepe as well.
