Just started making soufflé using a 3/1 ratio of milk chocolate to dark chocolate and holy moly it's amazing! Super easy to make too once you know how to do it. I failed pretty hard the first couple times due to not knowing how much to whip the egg whites.

Well for the record I’m sure these eggs in the photo weren’t fertilized. That doesn’t mean i think eggs still count as vegetarian.

It's one of the few dishes in my arsenal that is stupid simple, but really delicious. I've served it to lots of people that had never had it, and it always impressed.
Make a basic chunky marinara (sauteed onion, garlic, can of fire roasted tomatoes, whatever herbs or spices you want), poach eggs in the sauce to desired doneness, top with feta and cilantro, serve with flatbread for mopping up extra sauce.
I have two tiny cast irons to make individual portions with, but it's a shareable dish too if you want to just plop it in the middle of the table rather than spooning individual portions.

naw fair question.. never seen anything like this. OP are you getting any sorta flavor out of it like you would with the sun dried tomato?
