Jinya is definitely a chain you can get many places, but I’ll say as someone who loves ramen, it’s a pretty good chain.

What is the difference between authentic Asian food and inauthentic Asian food?

A really well made bowl of (spicy) Tonkotsu ramen is one of the very best culinary delights there is. Especially if you tuck into a steaming hot bowl on a cold, rainy, windy night. I always like a little pickled ginger in mine. I've thought so often about making it at home but it is a laborious, time-consuming process that seems better left to the pros.

It's not meat. It's not like vegetarians don't eat fruits cuz it's not vegetables either.

If I recall, vegetarian diets allows animal products that don't result in death? So, honey, dairy products, eggs. Etc etc.

there's a super easy way to tell: if you get food poisoning, it might have been undercooked. if you're fine, it probably wasn't.

Depends on the region. In a lot of countries eggs are part of vegetarian cuisine, but in South Asia (think India, Sri Lanka) they might be considered not vegetarian. Restaurants in India will often call themselves "pure veg" so as to underline that they definitely don't use eggs in their menu.
Vegans, of course, won't eat eggs as a rule.
