  • Dumplings are store bought "Bibigo" brand that I steamed! So not mine in this. But I made the dipping sauce using this recipe, and it was very good.
  • I used this recipe for Mint-Cilantro Coconut Rice, substituting full fat coconut milk, and adding an additional half cup of chicken broth.
  • Shrimp is sort of "wing-it", seasoned with salt and pepper, paprika, cayenne (to your liking, I like a lot), cooked medium heat in a skillet with 1 tablespoon olive oil and 1 tablespoon butter, just until they get some color but not cooked through. Remove from pan, add 4 cloves minced garlic, cook ~1 minute until fragrant, then add 3 tablespoons of honey, 1 tablespoon fresh grated ginger, 1 tablespoon of lime juice, and 1 tablespoon of seasoned rice vinegar (or sub more lime juice). Stir to combine and continue cooking until sauce begins to thicken. Add back in shrimp, toss to coat and cook until shrimp are cooked through but not overdone.

FYI, cheese and chili sauce on enchiladas is a texmex or American thing, you don't find lettuce, cheese, or tomato on tacos in Mexico.

Oh wow, looks like you nailed it! I've only made them a few times before, I bring out the griddle so I can do 4 patties at once haha ๐Ÿ˜… But they're so tasty, and messy in the best way!
