using Jasmine rice. I may try to use some short grain rice but isn't that more for a Japanese style fried rice? not that it matters too much, but I'm aiming for a more new york / boston style of chinese pork fried rice

So basically I start just like any other gumbo with a roux then your seasonings... then I add some red beans I've cooked previously from the freezer. Add some smoked sausage and cook just like you would any other gumbo then 15 minutes or so bring it down to barely a simmer and crack some eggs in to poach...

Good question. I actually considered using "prawns" in the title, but I figured most people seeing this would be American (like me) and might not know what prawns are. I suspect one of two reasons: 1) they're not the same animal, so if what I bought actually was shrimp, then selling it as "shrimp" would be correct; or 2) because the only term I've seen/ heard decapods marketed as is "shrimp" in the US, so that's what people here call both species. Also, more often, at least near where I live (southern US, not near a coast), we don't often see the larger sizes, so even if someone were served something prawn-size, it would blow our minds, lol.

I was there in 2012 and paid $27 for a pastrami & handful of pickles. Upon leaving received a $115.00 parking ticket. $142.00 pastrami sandwich was still worth it!

About $27 when I went in 2021. Worth the money in my opinion. It’s very tasty and the atmosphere is crazy!

Seems like you are skimping on the oil, which makes the schnitzel burnt in some parts and undercooked in others.
