I spent ages analyzing/trying cookware and ended up getting almost everything from Matfer Bourgeat. Very happy I did. We find the handles to be the best for extended use, though that’s a matter of personal preference. They don’t stay as shiny as some of the fancier more consumer oriented brands, but that doesn’t bother us — we are very tough on our cookware and actually like the ‘well worn’ aesthetic that results from it all.
I know it’s not on your list, but in addition to their stainless cookware you may want to consider one of their carbon steel pans for high temperature searing or other non-stick uses.
Vollrath is a similarly utilitarian brand and their higher end stainless lines are apparently well built. We have one non-stick pan that is inherently not BIFL, but has proven to be extremely durable.
We certainly looked at Allclad, but were actually more interested in Demeyere because of the rivetless cooking surfaces and liked the curved handles better than Allclad. Demeyere, like all Zwilling product can occasionally be deeply discounted so make sure you keep an eye out for sales. In the end both brands were a bit heavy and shiny for us.
Consider a cookware organizer/rack for your cupboards as we have found that not everything nests perfectly, even if from the same brand.
We skipped the frills of retail stores and got all our items from restaurant supply stores (either locally or at Katom or Webrestaurantstore online). Your challenge there will often be too much selection, rather than not enough!

I use Bottle Bright tablets when mine gets looking like that. I heat up water in the kettle to almost boiling then fill the thermos and drop a tab in for at least 30 mins. I've even left over night on tough ones. Its worked on everything I've tried it on. Plus it's non toxic.

I’ve had my chop wizard for over ten years but the blades are definitely dulling. I’ve used it a lot though. This will not be bifl though.

I bought a Miele vacuum many years ago. I am pretty sure that it will outlive me.

Throw a dishwasher pod in and fill it with boiling water. Let it sit a few minutes and the stains should release if I remember correctly. Might have to scrub a bit but it’ll come right off.

It sounds silly. I know and agree but they work! I hadn’t properly cleaned my thermos in years, when I heard about denture tablets. I picked up a box from a dollar store, boiled some water and plunked in two over night. When I brushed it and poured the water out the following morning, the buildup came out in chunks. It was disgusting and amazing all at the same time. Tea tasted a lot better too!

If you think it might be partly lime scale, then some citric acid (or lemon juice) with some boiling water would help. For stains, washing soda and hot water helps. If you just bleach it, then you'll remove the colour without affecting whatever's holding onto the colour.

A fuller brush, but I wouldn’t consider that a replacement for a vacuum. More like a secondary vac for quick messes.
The advice here (with some exceptions) is sound. A Miele or SEBO will last you 20+ years. Shark, dyson or any bagless & cordless vac are disposable trash.
Head over the r/vacuumcleaners they will help you out.

those are pretty much the same product in different formats! basically just oxyclean with extra ingredients for food safety and rinsability.

I use oxiclean as well, I use it for cleaning some of my brewing equipment too. I would recommend the “versatile free” as that’s what was recommended to me by other homebrewers

I’ve done it half a dozen times with my Yetis. I use PBW (homebrewer’s cleaner) or oxiclean versatile free (MUST be the “free” version!). Works like a charm every time.

Used to be camp duluth, but about a year and a half ago I’ve switched over to 2undr. Definitely not bifl but will last you 2+ years of daily rotational wear and super comfortable!
