I'm from Colorado but my mom was born in Texas and I've been there plenty of times.

It depends what you want. Pork is king in the southeast US, brisket and sausage in Texas, Burnt ends in KC. Sauce is another thing all together from the vinegar based ones in NC to the white sauce of Alabama.
